Our Philosophy

From the earth to the table, respecting nature

Agricultural production is at the heart of Masseria Sant'Elia's philosophy: genuine raw materials that express freshness, authenticity and nutritional value. In Petralia Sottana, the altitude and climate of the Madonie mountains favour slow, natural ripening: seeds are sown with patience and harvested only when the earth demands it. For the Calderaro family, everything starts with the land. Cultivating means preserving the essence of the territory: it's not just agriculture, it's memory that lives on.

The heart of the vegetable garden is tomato sauce, made by processing whole tomatoes, including the skin. Production is also complemented by seasonal vegetables from the Madonie mountains, such as wild chicory, cardoons, fennel and local legumes such as “badda” beans. The process is completed by the direct link with the Il Castello restaurant: here, the farm's products arrive in the kitchen, closing the supply chain and ensuring total control over quality.
